Kanako teaches at the Academy of Cheese, is a judge at the World Cheese Awards and has also published a book on British cheese.
Born to a family running a Wagashi (traditional Japanese sweets) business in a rural area of Japan, Kanako has always been interested in food culture. After moving to the UK to live, she got hooked on such a “culturally-rich-food”, cheese.
As well as talking to us about the differences between cheeses, we will get to taste the difference in cheese styles such as Gouda, Cheddar, Camembert, Stilton and Roquefort.
