Healthy Truffles


1 cup pitted dates
3/4 cup shredded coconut
handful walnuts, almonds and cashews
5 tablespoons unsweetened cocoa powder
2 tablespoons maple syrup or honey
Pinch of salt

  1. Grind the nuts in a food processor and then add the dates and coconut continue until you get an incredibly smooth paste. You will need quite a robust food processor for this.

  2. Add the maple syrup, salt and cocoa powder to the mix and process until well combined.

  3. With your hands form 10-12 one-inch balls. Of course, you can make them smaller if you like. If you have trouble with stickiness, try wetting your hands a little. You can coat them with cocoa powder, chopped nuts or more shredded coconut.

  4. Place them in the refrigerator or freezer for at least a couple of hours for optimal texture. I find that the texture resembles real truffles more when placed in the freezer.
